Head Chef – Senne Blomme (Bollo)
Hello, my name is Senne Blomme.
I grew up in Belgium, in the town of Maldegem, before moving to the vibrant city of Ghent, the place where my culinary journey truly began. For ten years, I worked there with passion as a chef in various restaurants, until it was time to broaden my horizons and explore the world.
My adventure led me aboard Hemisphere, the largest sailing catamaran in the world, where I spent six months working as the sole chef. During that time, I explored the entire Caribbean, from Barbados to Antigua, drawing inspiration from the flavors, products, and culture of the islands.
After this experience I briefly returned to Belgium, but the call of the world came quickly. I travelled through Colombia for three months before eventually landing on Bonaire, where I have now been living for nine months.
My cooking style is deeply rooted in the French-Belgian culinary tradition in which I was trained. I combine that foundation with the vibrant flavor nuances of the Caribbean and South America, resulting in dishes that feel familiar yet carry a tropical twist.
